Kinosaki is a beautiful small town focused on one thing: onsens. If you love them, this is the place to go. They have total of 7 onsens (one, the closest to the station, is currently being closed because of some reconstruction). One night would be too short to visit all of them; staying for four probably would be too expensinve for the experience. So I'd recommend staying 2-3 nights so you could visit (and collect stamps, hehe) all of them without rush.
